Manicotti is a favorite in our family. My 6 year old daughter will eat more than anyone when you put a plate of Manicotti in front of her. We made it this week and I wanted to share my recipe. Boil and drain: 1 package Manicotti noodles for 9 minutes (bring water to a rolling boil then add noodles and start timer). * toss drained noodles with 2 tbsp olive oil and set aside to cool. In a bowl mix: 32 oz ricotta cheese 16 oz mixed Italian shredded cheese (I use Frigo brand, it comes in a small clear tub, and is usually near the cream cheese at my Walmart). 1 tsp pepper 2 tsp salt (can use less or more to taste preference) 2 tsp oregano 1 tsp dill 2 tsp garlic powder (NOT SALT) 2 tsp onion powder Mix all ingredients well, put into gallon zip top baggie. Snip about a quarter of an inch off one bottom corner of the baggie, and use this to pipe the cheese mix into the noodles. (You can spoon it in, but it takes much longer). Place filled noodles in a baking dish top with sauce and cheese. Bake at 350 for about 25 minutes (top cheese will be melted). This makes a great freezer meal too.
