I love guacamole, my daughter loves guacamole – so much so in fact, that we order her a bowl of it with a spoon at Mexican Restaurants. So, needless to say, I have worked to perfect a recipe of homemade guac so that I can enjoy it anytime I want.
This is a perfect addition to any super bowl party! Tip: Put part of your guac out in a bowl for the party, with the rest in an airtight container in the fridge, refill as needed to keep it from turning brown. If it turns, just stir it up well, it’s just the avocado’s oxidizing from the air it does not mean the dip is bad.
1/2 medium lemon, juiced
1 lime, juiced
2 cloves of garlic, grated or diced finely
1/4 small red onion, diced finely
2 tsp cilantro, finely diced
2 roma tomatoes
**optional: 1 jalapeno (cut in half, remove seeds and stem, and dice)
Remove seeds from tomatoes and dice into medium sized chunks, set aside. Slice avocados in half, remove pit and spoon out avocado meat. Mash well (this works well with a potato masher). Add in the lemon juice, lime juice, cilantro, garlic, onion, tomatoes, and jalapeno’s – mix well and serve with chips, pita slices, or as a taco garnish!
