4 pork chops (1 inch or less in thickness)
1 cup pineapple juice
1 tsp onion powder
2 tsp garlic powder
1 tsp ground ginger
1 tsp chili powder
1/2 tsp salt
1/2 tsp pepper
Combine all ingredients, pour 4 tbsp into a separate bowl, and pour over pork chops (can use chicken if you aren’t a pork person). Allow to marinade for about 30 minutes.
Place on a hot grill for about 3-5 minutes per side (depending on the thickness of your chop). If your chop is closer to the 1 inch thickness you will probably cook it closer to 5-7 minutes per side, if it’s thinner you will cook it closer to 3-5 minutes per side. You don’t want any pink in your chop when it’s done.
Remove from grill. Drizzle with remainder of marinade, and allow to set for 2 minutes before serving. Add some grilled veggies and a nice salad for a healthy and light (but filling) summer meal!
