Strawberry Chicken

To say I have searched and searched for a recipe for this would be an understatement. Here’s the thing… my husband had strawberry chicken at a Chinese place in the mall. He loved it, and I have been trying to recreate it ever since. I finally gave up and created my own recipe.

5 tbsp butter
4 chicken breasts, cut into cubes
1 tbsp onion powder
1tbsp garlic powder
1tbsp sesame seeds (optional)
1/2 tsp salt
1 tsp pepper

1/2 cup strawberry preserves
1 tsp Sesame Oil
2 tsp Rice Wine Vinegar
1 tsp Onion Powder
1 tsp Garlic powder
1/2 tsp salt
1/2 tsp pepper

In a pan melt butter over medium heat. Place cubed chicken in melted butter, sprinkle sesame seeds and seasons over chicken, cover and cook 5-7 mins, stir and continue cooking until chicken is done through.

Place all ingredients in small sauce pan, and warm over low-med heat, stirring often.

When sauce is heated and chicken is cooked, combine sauce and chicken and serve with rice.
