I set out on a mission to find a way to copy the Broccoli Cheddar Soup from Panera Bread. I love that soup…mmmm….
Here is the recipe I found that most closely matches theirs.
4 cups chopped broccoli
2 cups chopped carrots
1/2 red onion chopped
1 stick butter
1 can Cheese Whiz Spread
2 cups chicken stock
1/2 gallon milk
3 tbsp flour
1/2 cup water
In a skillet melt butter. Add onion, broccoli, and carrots. Sauté for 5 mins on a low-med heat.
Add sautéed veggie mix to a large stock pan. Add chicken stock, and cheese spread. When cheese spread is melted, add milk. Cook on a low heat until warmed (about 20 minutes), stirring frequently.
Turn heat up, mix flour and water in a bowl, then add to soup. Stir frequently to prevent scorching and sticking. When soup has thickened (about 5-7 mins), remove from heat and serve.
