Moe and I have been trying to eat healthy, real food – she is much better than I am… the size of her garden compared to the size of mine will testify to this fact.
We decided to have my parents over for Mother’s Day instead of going out to eat, and my mom has a few food allergies, so cooking for her is always a challenge. (She’s allergic to garlic, onions, and tomatoes – all of which are favorites and staples in this house.) So, in my search to find real, healthy, non-allergic reaction inducing food, I decided to make roasted cilantro chicken, with a summer salad, with rosemary roasted potatoes.
Now, to find a delicious and healthy dressing…
Enter my homemade (a.k.a made up out of thin air) strawberry vinaigrette dressing.
Strawberry Vinaigrette Dressing
1/4 cup Strawberries, sliced
2 Tbsp Lemon Juice or Lime Juice
3/4 cup Apple Cider Vinegar
3/4 cup Olive Oil
1/4 tsp fresh dill, diced
2 tsp fresh Cilantro, diced
3 Tbsp Brown Sugar
1 tsp yellow mustard
Place all ingredients into a blender, and blend until smooth. Place in airtight container, in fridge, for 2 hours. Shake or mix before serving.
