Dinner, ‘Chopped’-Style!

Tonight, Josh made us a quick pasta dinner with thinly-sliced potatoes and onions, tossed with oil and spices. It was soooo yummy. Sometimes a simple pasta is so refreshing and tasty. Our daughters loved it and asked for seconds. They even suggested having it as a side with grilled chicken or steak next time. Success!!

If you’d like to make it yourself, here’s the ingredient list:

  • 1 (12oz.) box of Garden Delight spaghetti
  • 1/2 red onion cut into thin slivers (or however you like yours cut)
  • 3 or 4 small, new potatoes sliced thin (we like the flavor of new potatoes better and the fact that they have fewer carbs doesn’t suck either)
  • Pompeian Olive Extra Premium Mediterranean blend oil (we love the light flavor of this oil but you can use any you have on hand)
  • oregano
  • basil
  • black pepper
  • Adobo

Note: My hubby added the spices to our taste. You can add as much or as little as you like, but he used these particular spices to create this dish.

In a large pan, saute the onions and potatoes together on medium heat with a splash of oil until potatoes start to soften, then you can adjust to low heat. Season as you go. Boil your pasta. While the pasta is finishing, the potatoes and onions will brown a little. Once you’ve strained your pasta, you can add it to the pan and toss it all together with a little additional oil. When we eat pasta, we like to top it off with a little black, Hawaiian sea salt.

We only had enough left to fill a small tupperware container haha. Guess what mommy’s having for lunch tomorroooooow?!!!! (yes I sang that, don’t judge haha)
