Salted Caramel Corn

I have a favorite caramel corn recipe that we use, but it takes FOR-EV-ER to make.

Today I wanted to make a simpler recipe and surprise my hubby with it when he came home from a weekend away. I scoured the Internet, and used my best reasoning skills to combine several recipes to make one that I thought would work.

It was easy and delicious!!

Pop 1/2 cup of unpopped kernels in either an air popper or on your stovetop. Pour into a bowl, and set aside.

Combine 1 cup butter, 1/2 cup light corn syrup, 1 cup brown sugar. Boil for 4 minutes, stirring occasionally (don’t let it burn).

Remove from heat add 1 tsp vanilla and 1 tsp salt. Stir well. Pour over popcorn and stir well.

Pour onto a well greased baking sheet, top with 1 1/2 tbsp sea salt or kosher salt, and bake on 300 for 30 minutes, stirring twice.

Pour onto counter, sprinkle with 1/2 cup white sugar, and let cool. Break apart and put in airtight container.
