In truth, this was a “bag meal” we bought at the store, and I decided it would be much better made with our own ingredients and adjusting a few things.
4-5 Baby Red Potatoes
1 bag mixed frozen vegetables
1 bag Tyson Grilled Fajita Chicken Slices (fajita meat cut, so it’s thin)
2 cups BBQ Sauce (We use Sweet Baby Rays)
First, wash and chop potatoes. (Don’t peel). Par boil potatoes (boil until partially done). Drain.
Next, in a 12 inch skillet combine all ingredients and cook covered on med heat for 8 mins stirring occasionally. Remove cover, cook additional 2-3 minutes if needed.
Serve with rice.
