Aleah posted her favorite chili recipe the other day and I just wanted to throw in a quick idea for those of you who may not like whole-bean chili, but would still like a healthier chili. My hubby doesn’t really love beans in chili. It’s a texture thing. Soooo, out comes the food processor. We mince up celery, carrots, and mushrooms. Then we sauté them in a little oil and when they’ve softened, add them into the chili. Sometimes we even take a can of cannellini beans drain, rinse, and purée them and add that in too. It’s a little extra effort, but it really gets some veggies in without losing that amazing chili flavor. Try it out and let us know what you think :). – Moe
