HEARTY VEGETABLE SOUP
It’s cold where we live, so that means I want warm soup. I raided my cabinets and refrigerator and threw together this delicious and healthy soup.
1 small bag mixed frozen vegetables
1 cup chopped broccoli
1 cup chopped cauliflower
1 can diced tomatoes, with juice
1 cup chopped fresh spinach leaves
1 cup chopped fresh Kale leaves
2 cloves garlic, grated
2 medium potatoes, washed and cubed
3 cups beef broth (or veggie if you choose)
4 cups water
1 tsp salt
1 tsp pepper
1 tsp red pepper flakes
1 tsp thyme
1/4 tsp nutmeg
1 tsp chili powder
1/2 tsp cumin
Combine all ingredients, cook until potatoes are tender.
Add 1/2 cup uncooked quinoa, cook on med-high another 15 mins.
*you may thicken with flour and/or cornstarch if you wish.
Serve with crackers and/or cheese, or other favorite soup toppings.
