I have this delicious potato soup recipe that I love… but it’s made with flour. Since I am now gluten free because of an allergy, I am searching for ways to make my favorite non-GF recipes, GF. First stop, granny’s potato soup.
This recipe starts with a simple flour based gravy.
1/2 cup bacon grease
4 tbsp coconut flour
4 tbsp cornstarch
1/2 tbsp Garlic Powder
1/2 tbsp Onion powder
6 cups milk
In a large skillet, warm your bacon grease over medium heat. Don’t get it too hot, or your coconut flour will burn. Whisk your flour and cornstarch into your grease until dissolved. Add seasonings, and allow flour to brown. This will happen fast. Remember that this us where your flavor comes from so get it good and brown. Mine was blackish.
Add milk quickly and stir as you add it. Turn heat to low-medium heat and allow to cook until thickened. You want it to be fairly thick, because you will add more milk later.
In a large stock pot add 6-8 boiled, chunked potatoes. Add gravy, and stir. Add milk as needed to thin the gravy… you will be using this to make sure the soup has plenty of base also.
Serve with shredded cheese and bacon pieces.
