Mock Chicken Parm
You guys, this is divine. That’s the only word to describe this food.
1 spaghetti squash
1 cup Spaghetti sauce (canned or homemade)
2-3 Chicken Breasts, cooked and chopped.
Spices (see below)
Cut spaghetti squash in half, spoon out seeds.
Drizzle with olive oil, and then sprinkle with salt, pepper, thyme, garlic powder, and onion powder.
Bake at 425 degrees for 30-40 mins until tender.
Remove from oven and using fork, shred squash. This should be very easy, if it’s not, the squash isn’t done.
Once the squash is shredded, place in skillet with 1 tbsp olive oil and 1/4 cup sauce.
Pan fry on high heat for 3 mins.
Place squash on plate, top with chicken, more sauce, and finally parmesean cheese.
Serve and enjoy!!
