Avocado Egg Cups

I read a study recently that said a diet that includes healthy fats is more successful for women wanting to lose weight. 

My friend Kelli made these at work a few weeks ago and I fell in love. So when I started planning my 21 day fix meal plan, I knew these had to be on it.


1 avocado

2 eggs


1 ounce shredded cheese

Bacon crumbles (optional)
Preheat oben to 450. 

Scoop out 1/2 of each side of the avocado (in the center) to make room for the egg. Crack eggs into a bowl individually, pour into each half. Sprinkle with pepper
Bake on 450 for 9 minutes, top with shredded cheese and bacon crumbles and bake until cheese is melted. I didn’t use bacon in mine. 

I also like to leave the cheese off and eat these cold, but they are delicious warm also.
