Coconut Protein Cookies
Oh.m.wow. These cookies. You guys, seriously. I found the original recipe for this at theheartysoul.com and fell in love.
Start by mixing the following ingredients:
2 cups of shredded coconut flakes
2 tbsp coconut oil, melted
1 tsp cinnamon
2-3 tbsp Water
1/2 cup protein powder
1 tsp vanilla
It will be a little crumbly, but if it’s too crumbly to form cookies, add 1 tsp water at a time until it reaches the above texture. You want it wet enough to stick in a clump, but not too wet. (Think no bake cookies)
Next scoop or form into clumps on a cookie sheet (I used my cookie scoop and then flattened).
Bake at 350 for apx 15 mins.
These smell divine while they are cooking, and taste just as good.
If you make 12 cookies from this recipe, then you are getting 5 grams of protein per cookie.
